Braised red cabbage & apples

 

##INGREDIENTS (makes 8 servings)## ###for vinaigrette### * 1 tbsp vegetable oil * 1 small onion, peeled and sliced * 3 Spartan, Spy or Granny Smith apples, peeled and chopped * 2 tbsp granulated sugar * 1 red cabbage, cored and shredded to make 8 cups * 3/4 cup white wine * 1/2 cup apple juice * 2 tbsp red-wine vinegar * 2 garlic cloves, minced * 1 bay leaf * 1 cinnamon stick * 1/2 tsp salt * 1/4 tsp each pepper and caraway seed ###for salad### * 10 cups baby arugula or other greens * 6 slices speck (very thin) * parmesan shavings

##INSTRUCTIONS## 1. Heat oil in a large, deep skillet over medium heat. 2. Add bacon & onion & cook, stirring often, for 5 mins. 3. Increase heat to high & add apples. Sprinkle evenly with sugar & saute, turning as needed, for 5 mins or until golden. 4. Reduce heat to medium & add cabbage, wine, apple juice, vinegar, garlic, bay leaf, cinnamon stick, salt, pepper & caraway seed. Bring to a boil. 5. Reduce heat to medium-low & cover. Braise, stirring occasionally, for 20 mins or until cabbage is tender. 6. Discard bay leaf & cinnamon stick before serving.
