##INGREDIENTS (makes 6 servings)##
* 6 small apples (Granny Smith, Royal Gala or McIntosh)
* 6 popsicle or candy sticks
* 1 cup each granulated sugar and light brown sugar
* 3/4 cup 35% cream
* 1/4 cup corn syrup
* 2 tbsp butter
* 1 pinch salt
* 1 tsp vanilla extract
* chopped nuts, such as pecans, almonds or peanuts
(see INSTRUCTIONS below)
##INSTRUCTIONS##
1. Wash, polish apples with clean, dry dishtowel until dry & smooth.
2. Insert popsicle/candy stick in each apple's stem end & put on parchment-lined baking sheet in fridge.
3. Combine sugars, cream, corn syrup, butter, salt in medium saucepan.
4. Stir over medium heat until sugar dissolved & caramel bubbling.
5. Place candy thermometer in saucepan & increase heat to medium high. Boil caramel without stirring until temp. reaches 240 F.
6. Remove pan from heat. Wearing oven mitts, stir in vanilla.
7. Let caramel stand with thermometer in until temp. falls to 200 F ( 5-10 mins).
8. Meanwhile, remove baking sheet from fridge & place over a baking pan filled with ice cubes.
9. Dip & slowly turn apples in caramel until coated. Transfer to chilled baking sheet. Fold up caramel that pools under apples.
10. Dip coated apples in nuts, pressing slightly into bottom & up sides of apples, chill until set.
