Chilled Citrus-Cucumber Soup

Ginger and red onion enhance the sweet taste of cucumber and avocado, making for a smooth soup with rich flavour

##INGREDIENTS## * 2 avocados * 4 cups chopped English cucumber (about 2 small cucumbers) * 1½ cups red onion, roughly chopped * 2 cups vegetable stock * 1 tsp grated fresh ginger * 2 tbsp Ponzu, or lemon juice * 1 tsp salt * chili oil, optional

##INSTRUCTIONS## 1. Slice avocados in half, remove pit and meat. Reserve a small portion for garnish. 2. In a blender purée cucumbers, avocado and onion. Add remaining ingredients and process until smooth. Chill until ready to serve. Taste prior to serving and season if necessary. 3. Garnish soup with cucumber julienne, avocado and a drizzle of chili oil. **Chef's Tip:** It takes only 10 minutes to prepare but the flavours develop further if it’s made a few hours in advance.
