Chilled English pea soup with crème fraiche

Fresh peas from the garden are ideal, but frozen will work in a pinch. Serve this flavourful, light soup cold with store-bought crème fraiche or a dollop of plain yogurt

##INGREDIENTS (makes 8 servings)## * 3 tbsp olive oil * 1/2 cup chopped red onion * 1 cup chopped leeks, white part only * 3 garlic cloves, minced * 1/2 cup Riesling wine * 6 cups fresh peas * 8 cups low-sodium vegetable stock * 1/2 tbsp crème fraiche per serving * Parsley sprigs

##INSTRUCTIONS## 1. Heat olive oil in a pot over medium heat. 2. Add onion, leeks and garlic and cook until translucent (about 5 minutes). 3. Add wine and reduce until 1 tablespoon of liquid remains. 4. Stir in peas and stock. Bring to a boil. Reduce heat and simmer for 10 minutes. 5. Purée soup with a hand blender. 6. Season with salt and pepper to taste. Garnish each serving with crème fraiche and a sprig of parsley.
