Citrus mascarpone with caramelized apple and fig

Sweet and tart flavours mingle in this marscarpone spread

##INGREDIENTS (makes 1/2 cup)## * 1/2 cup mascarpone cheese * 1 tbsp fig jam * 1 tsp finely chopped lemon zest * 1 Granny Smith apple, cored * 1 tbsp unsalted butter * 2 dried figs, quartered * 1/3 cup brown sugar * Clover honey, for drizzling

##INSTRUCTIONS## 1. Combine mascarpone, fig jam and lemon zest in a small bowl and refrigerate at least one hour. 2. Cut apple in half and then into wedges, about 1/4-inch thick. 3. Melt butter in a pan over medium heat. Add apples and figs and sprinkle in brown sugar. Gently simmer until fruit begins to soften slightly, about 5 minutes. Do not overcook—keep apples firm. Remove from heat and cool. 4. Place mascarpone mixture on a serving dish. Garnish with apple wedges and figs. Pour some caramelized juices from pan on top. Crown with a light drizzle of honey.
