Easy turkey chili

The flavours itensify by making this dish in advance. Serve with traditional garnishes such as grated Monterey Jack cheese, chopped cilantro and sour cream

##INGREDIENTS## * 2 tbsp olive oil * 2 cups white onion, chopped * 3 cloves garlic, minced * 1 large red pepper, diced * 1 tbsp canned chipotle peppers, chopped * 2 tbsp each dried oregano, chili powder and ground cumin * 2 lbs ground turkey * 1 can (796 ml) whole plum tomatoes * 1 can (540 ml) red kidney beans * 1 can (540 ml) chickpeas * 1 bunch green onions, finely chopped

**INSTRUCTIONS** 1. Warm olive oil in a large Dutch oven over medium-high heat. Add onion, garlic, red and chipotle peppers and spices, cooking until onion is translucent. 2. Mix in turkey, season generously and begin to brown (add more oil if necessary). 3. Add tomatoes, beans and chickpeas. 4. Reduce heat to medium-low, cover and simmer, stirring occasionally until turkey is fully cooked and sauce has thickened (about 1 hour). Season with salt and pepper and top with green onion. *Makes 12 servings.*
