Free-form meat loaf & caramelized vegetables
Meat loaf gets a flavour boost from fennel and a sweet tomato topping. Leftovers make delectable sandwiches.
**INGREDIENTS**
* ¾ lb shallots, peeled
* 5 carrots, cut into 4-inch lengths and quartered lengthwise
* 2 tsp olive oil
* 1 tsp honey
* 3 tsp kosher salt
* 2 tsp freshly ground black pepper
* ½ cup ketchup
* 2 tbsp Dijon mustard
* ¾ cup finely diced onion
* ¼ cup chopped fresh parsley
* 1 tbsp Worcestershire sauce
* 1 tsp chopped fresh oregano leaves
* 1 tsp minced garlic
* ½ tsptoasted fennel seeds
* 1 egg
* 1 lb lean ground beef
* ½ lb lean ground pork
* ½ lb ground veal
