##INSTRUCTIONS## 1. Stir honey and balsamic vinegar together until combined. Add chopped mint. Set aside. 2. Preheat an outdoor or indoor grill to medium-high heat. 3. Bring a pot of water to a boil. 4. Using a sharp knife, score a small X in the bottom of each peach. 5. Gently drop peaches into boiling water. When the X begins to peel, remove peaches and plunge immediately into cold water. Use your hands and a paring knife to slip skins from peaches. Pat dry and quarter, removing pit. Transfer to a bowl. 6. Quarter plums, removing pits and add to bowl with peaches. Add butter and toss until evenly coated. 7. Place prepared fruit on grill, cut sides down. Brush all over with honey mixture. Cook, turning and basting often, for 3 to 4 minutes or until well marked. Transfer back to bowl. 8. Drizzle any leftover honey mixture from the bowl onto fruit, add grapes and toss to combine. Just before serving, sprinkle with cheese and mint. Makes 6 servings.
