Juliet's Fennel Salad with Radish

Fresh radish adds crunch and peppery punch to this salad. Terrif raw radishes are also delicious steamed, sautéed or stir-fried

##INGREDIENTS## * 3 tbsp olive oil * 2 tbsp fresh orange juice * 1 tbsp rice vinegar * 1 tsp Dijon mustard * 1 tbsp chopped fresh mixed herbs (parsley, chives or tarragon) * 1 small fennel bulb, halved and thinly sliced * 1 bunch watercress, thick stems removed * 1 small head bibb lettuce, torn into bite-sized pieces * 4 radishes, stems removed and thinly sliced

##INSTRUCTIONS## 1. Whisk first 5 ingredients together and season with salt and pepper. Reserve. 2. In a bowl combine fennel, watercress, lettuce and radish, and drizzle with vinaigrette. **Chef's Tip:** Paper-thin fennel and radish are essential to this salad. Try using a mandoline to shave the vegetables. Be sure to dress the salad just before serving.
