##INGREDIENTS##
* 1 roasted duck, whole
* 6 green onions
* 1 romaine heart
* ¾ cup hoisin sauce
(see INSTRUCTIONS below)
##INSTRUCTIONS##
1. Carve duck by first removing whole breasts, leaving skin on, and cutting them into thin, long slices. With your hands, remove as much meat as possible from legs and remainder of bird.
2. Trim roots and dark green ends off green onions. Cut in half and then slice very thinly lengthwise.
3. Remove root from romaine heart and separate leaves.
4. Arrange duck slices, onions and lettuce on a large platter along with hoisin sauce. 5. Place a few duck slices on a lettuce leaf; top with onion and a dollop of hoisin sauce; and wrap.
**Chef's Tip:** Roast duck can usually be found at Asian markets or in Chinatown. If roast duck is unavailable, substitute it with rotisserie chicken.
