Roasted Fingerling Potatoes

Tossed in seasoning and grilled, these savoury potatoes are crisp and delicious

##INGREDIENTS## Make ahead of time and reheat in the oven. * 2 lbs fingerling potatoes, washed and halved lengthwise * 1 cup sliced shallots * 1/4 cup olive oil * 2 tbsp fresh thyme

##INSTRUCTIONS## 1. Preheat barbecue to medium. 2. Toss potatoes, shallots and olive oil in a bowl and season with salt and pepper. 3. Wrap potatoes in aluminum foil, place on the barbecue and cook until fork-tender, about 20 minutes. 4. Toss with fresh thyme and serve. Makes 6 to 8 servings.
