smoked salmon canapés

Yes, these canapés look intricate but no one needs to know how easy they are to make!

##INGREDIENTS## * ¼ cup low-fat sour cream * 1 lemon, zested and juiced * 1 tbsp finely chopped fresh chives (reserve 1-inch tips for garnish) * 6 slices smoked salmon * 12 cocktail pumpernickel rounds

##INSTRUCTIONS## 1. Mix together sour cream, 1 tablespoon lemon juice and chives. 2. Cut smoked salmon pieces in half, lengthwise, and twist into decorative shape. 3. Top rounds with a small dollop of chive sour cream and place salmon on top. Garnish with lemon zest and chive tips. Makes 12 **Chef's tip:** If assembling in advance, butter pumpernickel to prevent it from getting soggy.
