Speck-blackberry salad

Serve up a fantastic summer salad with an array of fresh greens—try arugula, pea sprouts or watercress

##INGREDIENTS (makes 8 servings)## **for vinaigrette** * 24 fresh blackberries (set 12 aside for garnish) * 1/2 cup extra-virgin olive oil * 1/4 cup fresh lemon juice * 1 tsp port wine (optional) **for salad** 10 cups baby arugula or other greens 6 slices speck (very thin and torn into pieces) Parmesan shavings

##INSTRUCTIONS## **for vinaigrette** 1. Crush 12 blackberries in a bowl and whisk in remaining ingredients. **for salad** 1. Place greens in a large salad bowl, add speck and toss. 2. Drizzle 1/3 cup of dressing over greens and gently mix. Plate salad with remaining blackberries and garnish with cheese shavings.
