Spring Greens with Pink Grapefruit

Tossing together peppery greens with creamy avocado, sweetly tart pink grapefruit and crunchy red onion makes for a salad that’s sure to please the palate

##INGREDIENTS## * 2 pink grapefruit * 1 tbsp pomegranate molasses * 1 tbsp fresh lime juice * ½ tsp Dijon mustard * ½ tsp granulated sugar * ¼ tsp salt * 2 tbsp olive oil * 1 bunch watercress, stems trimmed * 3 cups mixed greens * 2 avocadoes, diced * ½ small red onion, thinly sliced * 3 tbsp chopped fresh cilantro

##INSTRUCTIONS## 1. Cut off top and bottom of grapefruit. Using a knife, cut off peel in strips, from top to bottom, removing white pith. Holding grapefruit over a bowl, cut out each segment, leaving inner membrane intact. Set aside. Squeeze membrane to extract juice, then discard. Strain juice into a small bowl. 2. In a large bowl, combine pomegranate molasses, lime juice, mustard, sugar and salt. Whisk in 3 tablespoons of grapefruit juice, then oil. 3. Toss watercress and greens with vinaigrette. Plate greens with grapefruit segments, avocado and onion. Garnish with cilantro and freshly ground pepper. Serves 6
