Vanilla Chai Lattes

A dessert of market-fresh strawberries can be made extra special by dipping them into amaretto first, then raw sugar

##INGREDIENTS## * 4 black tea bags * ½ tsp cinnamon * ¼ tsp each ground cloves and cardamom * 1 1-inch piece ginger, peeled and thinly sliced * 3 cups boiling water * 2 cups milk * 1 tsp vanilla extract * freshly grated nutmeg * honey, optional sweetener

##INSTRUCTIONS## 1. Combine tea, spices and ginger in a large measuring cup. Pour in boiling water. Let steep 10 minutes, then remove tea bags and ginger. 2. Whisk milk in a pot over high heat until frothy, then add vanilla. 3. Divide tea among six glasses and top with hot milk. Sprinkle with nutmeg and serve. Sweeten with honey. **Chef's tip:** For iced chai latte, chill steeped tea, then process with cold milk and ice in a blender until frothy. Serves 6
